1⁄4 cup dates (50g)
1 1⁄4 cup oats or oat flour (120g- use GF oats if needed)
1⁄2 cup organic coconut oil (125g)
40 rum flavoured stevia drops (Can sub for 3 tablespoon of other natural sweetener)
1 cup of shredded or desiccated coconut (3/4 for the mixture, save 1/4 for rolling them)
1/4 cup raw cacao powder (30g)
1/2 teaspoon vanilla extract
1 tablespoon rice malt syrup, honey, agave syrup (or other sweetener of choice- more or less to taste. I found 1 tablespoon to be perfect!)
1 scoop of chocolate protein powder
Pinch of salt
Place all the ingredients in a food processor or blender and blend until desired consistency is reached. I did mine in the food processor and it turned to a butter which resulted in firm truffle-like rum balls! Yum!
Roll up into little balls about the size of a large cherry tomato and store in the fridge 🙂
