Introducing – Feta and Olive Stuffed Chicken Breasts
This is seriously mouth watering, and pretty easy to make 🙂
It’s high in protein
High in healthy essential fats
Quick and easy
And best of all, it’s delicious 🙂
I see so many people eating such bland and boring meals for weight loss, but this is a good way to get bored really fast, and fall off the bandwagon.
So make sure you experiment with different recipes, and MIX it up a bit 😉
Serves: 4 (just double if you want a bigger batch)
Prep time: 15 minutes
Cooking time: 10 minutes
4 x 150 gram chicken breast fillets
100 grams of feta, crumbled
1 clove of garlic, crushed
2 tablespoons of olive tapenade
4 large basil leaves, plus extra to serve
Olive oil spray
200 grams of green beans, trimmed
1 tablespoon of balsamic vinegar
Cut a deep pocket into the thickest side of the chicken breasts to create a pocket
Combine feta, tapenade and garlic in a bowl. Place a basil leaf in each pocket, then divide the feta mix among the pockets. Secure with a skewer, then lightly speak the chicken pieces with olive oil
Heat a non stick frying pan over medium heat and pan fry the chicken for 5 minutes each side or until cooked through (the time can vary, depending on the thickness of the chicken breasts)
Meanwhile, blanch the beans in boiling water for 1 – 2 minutes. Drain and toss them with balsamic vinegar ***Please note, you can use raw beans if you prefer..
Garnish the chicken with extra basil leaves and serve with green beans and a green salad
To make your own olive tapenade, simply process 1 cup (150 grams) of pitted kalamata olives, 2 chopped anchovy fillets, 1/2 clove of garlic, chopped, 2 tablespoons of rinsed capers and 1 tablespoon of olive oil to a coarse puree. Stir in 2 teaspoons sherry vinegar, to taste. Season with freshly ground black pepper.
*** You could use any of the leftover home-made tapenade as a dip***
