Introducing – Mango Chicken Salad

Serves – 4 (just double if you want a bigger batch)

Prep time – 15 minutes

Cooking time – 10 minutes

Ingredients

400 – 500 grams of chicken breast fillets
100 grams of mixed green salad leaves
1 large mango, peeled and sliced
1 small lebanese cucumber, halved and sliced
1/2 red (spanish) onion, thinly sliced
1 tablespoon of extra virgin olive oil
2 tablespoons of freshly squeezed lime juice
1/2 teaspoon of grated ginger
1 teaspoon of gluten free low sodium soy sauce
Chopped chilli to taste (optional)
3 tablespoons of roughy chopped coriander

Instructions

Step 1
Place the chicken in a small saucepan and cover with water. Bring to the boil over medium heat, then reduce the heat to a low and gently simmer for 10 minutes. Remove the pan from the heat and set aside to cool, then shred the meat

Step 2
Arrange the salad leaves on a serving platter or individual plates and top with the chicken, mango, cucumber and onion

Step 3
Whisk together the olive oil, lime juice, grated ginger, soy sauce and chilli (if using). Pour the dressing over the salad and sprinkle with coriander

Step 4
ENJOY!
